This bbq chicken pizza satisfies all that- and more! It’s also fabulously nutritious with whole grains, lean protein, and greens!
Did I mention is was quick and easy to make?
I did you leftover grilled chicken, which contributes to it’s quick cooking time, but that’s even more reason to eat this up! It reduced food waste and utilizes leftover ingredients in a new and interesting way!

This is a perfect weekend lunch or even making a batch of these and bring them to reheat or eat cold during the work week {that sounds like a perfect option for these almost– miserably hot and humid days down here in NOLA}.
Or this can be a fast remade dinner on those hot nights when you work all day long and squeeze in your hot and sweaty workout and all you want is something nutritious and fast.
Well here you go- a light, easy, and tasty meal to suite all your needs. Serve it with a side salad or an extra veggie if you need!
BBQ Chicken Pizza
Serves: 1
Ingredients:
1 whole grain tortilla
1 tablespoon bbq sauce
4 ounces grilled chicken, sliced
1 ounce shredded part skim mozzarella cheese
a heaping handful of arugula
Directions:
Preheat a grill pan to medium heat.
Place the tortilla on the pan to warm through and then flip to warm on the other side (about 15-30 seconds total). Spread on your favorite bbq sauce. Evenly distribute the chicken throughout the tortilla. Sprinkle on the cheese.
Cover the pan and allow everything to warm through. Once the cheese has melted sprinkle on the arugula.
See how easy that is?
The truly easiest part is eating it all up! Yum!
