For some reason cobblers and crisps are my absolute favorite type of dessert.
Don’t get me wrong, I’m a chocoholic by nature, but warm softened fruit with a crunchy topping just gets me to the core.
Maybe I love them so because I often think of making them during the summer time and that can bring back feelings of care free, light-hearted nostalgia. They make a perfect summer dessert.
So what happens when you can’t decide between the crumbly soft texture of a cobbler or a crunchy buttery crisp? You combine them into a “crumbler,” of course, for a perfect light and comforting summer treat!
Peach Apple Blueberry & Walnut Crumbler
Serves: 12
Ingredients:
Filling:
3 apples, cored and thickly sliced
6 peaches, sliced
3 small containers of blueberries
2 tablespoons granulated sugar
2 1/2 tablespoons cornstarch
1 lemon, zested and juiced
pinch of kosher salt
Topping:
1 cup oat flour
2 tablespoons brown sugar
2 tablespoons cornstarch
2 teaspoons baking powder
6 tablespoons Promise vegan butter
1/2 cup unsweetened vanilla almond milk
1/2 cup walnuts, chopped
Directions:
Preheat the oven to 350 degrees.
Prepare the filling by combining the fruit in a baking dish that has been sprayed with non- stick spray. Add the remaining filling ingredients and toss lightly to combine.
For the topping, combine the flour, sugar, cornstarch, and baking powder together in a mixing bowl. Cur the butter into the dry mixture with a pastry cutter. Add the milk and walnuts and gently fold everything together to combine.
Bake in the oven for about 50 minutes until the top is lightly golden brown and the filling is bubbly. Serve warm, but slightly cooled.
I used whole grain oat flour in the place of refined flour for more the fiber benefits and satiety, I also limited the amount of added sugar to just a teaspoon per serving. Making this a heart healthy and diabetic friendly dessert.
The walnuts in the topping are an added nutritional benefit as they provide 2.5 grams of ALA {an omega-3 fatty acid called alpha linolenic acid} as well as 4 grams of protein and 2 grams of fiber per ounce. Not too mention they provide a nice creamy yet crunch texture.
